Method

Preheat your oven to 180 degrees (Celesius). Mix together flour, sugar, coconut and rolled oats. Melt butter and golden syrup together. Dissolve baking soda in boiling water and add to butter and golden syrup. Stir the butter mixture into dry ingredients. place level teaspoons of mixture onto baking sheet/oven trays around 4 cm apart. Flatten with a Fork. Bake for around 15 minutes or untill golden

Light as Air Sponge.

Ingredients

Method

Preheat oven to 190 degrees (Celesius). Grease Two 20 cm round sponge tins. Line bases of sponge tins with baking paper and grease tins. Beat egg whites until stiff. Beat in sugar, then egg yolks. Gently sift Cornflour, flour and baking powder into the egg mixture.Disslove golden syrup in boiling water. Add into egg mixture, stirring in gently with a metal spoon. Pour mixture into prepared tins. Bake for 20 minutes, or until cakes spring back when lightly touched. Leave to rest for 5 minutes before turning onto wire rack. Spread with jam and whipped cream, before sandwiching both sponges together.
